when I was growing up, thunder & lightning was a staple at our dinner table throughout the spring and summer months. my grandmother introduced me to this recipe, and the reasoning behind it, when I was just a child, but it’s one that I still make to this day. any time the skies would darken, she’d go out and pick all of the cucumbers, tomatoes, and onions from the garden, for fear they would get water rot from the impending storm (hence, thunder & lightning). of course, then you had to find something to do with a bounty of veggies. there’s nothing quite as refreshing as delicious, fresh vegetables straight from the garden, making this recipe perfect for picnics, potlucks, and parties. this recipe will work for when fresh tomatoes aren't available. but if you have 'em, add 'em in.
